Super easy, fresh, health Basil Pesto Pasta, great for a summer lunch or dinner.
Basil is a absolute staple is my garden and it make this super delicious and fresh Basil Pesto Pasta.
To make the pesto simply toss all the ingredents in the food processor and blitz. Toss with cooked pasta and your good to go.
Simple, Fresh and Tasty
- 3 cloves garlic
- 1/4 cup pine nuts toasted
- 1/2 cup parmesan cheese grated
- 2 cups fresh basil leaves firmly packed
- 1/2 cup olive oil
- 300 g pasta of your choice
- 1/2 cup parmesan cheese for serving
Cook pasta as per instructions on packet, before draining pasta reserve 1/4 cup of the cooking liquid.
While pasta is cooking, make the pesto by blending garlic, pine nuts, grated parmesan, basil in food processor or blender until almost smooth.
Gradually add in oil while processing until the pesto has thickened up.
Add pasta, pesto and cooking liquid back to the pot and stir to combine.
Serve and top with remaining parmesan cheese.
Toast pine nut is fry pan on medium heat until lightly golden. Do not leave unattended as they can burn very quickly.
Pasta Choice - spaghetti, penne, fettuccine all work well.
