Chocolate Mud Cookies here we come!
Let’s get started by finely chopping the dark chocolate, I find the easiest way to to this is with the food processor.
Next beat the butter, sugar and vanilla until pail golden colour, making sure that the butter is at room temperature; add the egg and combine.
Now it’s time for the dry ingredients, sift in the flour and cocoa powder, add the chocolate and stir until dough is formed.
Spoon the dough on the baking trays, I find this easiest using a ice cream scoop, and your are ready to bake.

- 250 g dark chocolate
- 125 g unsalted butter
- 1 cup brown sugar
- 1 tsp vanilla essence
- 1 egg
- 1 1/2 cups plain flour
- 1/3 cup unsweetened coco powder
Pre-heat oven to 180°C / 160°C fan-forced.
Line two baking trays with baking paper.
Pulse chocolate until finely chopped in a food processor, then set aside.
In a large bowl, cream butter, sugar and vanilla using electric beaters. Add in egg until just combined.
Sift in flour and cocoa, add chopped chocolate and stir until soft dough is formed.
Make 1.5 tbsp sized dough balls, place on trays and flatten.
Bake for 8-10 minutes, then cool on tray for a few minutes.
Transfer to wire rack to cool completely.
Keep in an air tight container for up to 1 week.
